  • ½ teaspoon saffron threads, steeped in 2 tablespoons warm water
  • 3 cups seafood or chicken broth
  • ½ pound shrimp, peeled and deveined
  • ½ pound mussels, scrubbed and cleaned
  • ½ pound squid, cleaned and sliced into rings
  • 1 cup cooked chickpeas (canned or freshly cooked)
  • ½ cup peas
  • Salt and pepper to taste
  • Fresh parsley and lemon wedges for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until softened. Add rice and paprika, stirring to coat.
  2. Stir in saffron water and broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Arrange shrimp, mussels, squid, and chickpeas on top of the rice. Cover and cook for another 10-15 minutes, or until the shrimp is pink, the mussels open, and the rice is tender. Discard any mussels that remain closed.
  4. Sprinkle with peas and let rest for 5 minutes. Garnish with parsley and serve with lemon wedges.
